Some of you had asked about the Eclair Cake I made for Joe's birthday. Long gone are the days of my "theme cakes" for my boys birthdays, I think my most favorite one was Rainbow Fish made with Necco Waffers!
Eclair Cake is the most requested birthday cake in our house - I usually tripple the recipe for the large sized pan I use...The directions below are for a 13" x 9" pan.
Ingredients
2 (3.5 ounce) packages instant vanilla pudding mix
1 (8 ounce) container frozen whipped topping, thawed
3 cups milk
1 (16 ounce) package graham cracker squares
1 container prepared milk chocolate frosting
Directions
In large bowl, thoroughly blend the pudding mix and milk. Let sit 5 minutes then fold in whipped topping.
Arrange a single layer of graham cracker squares in the bottom of a 13x9 inch baking pan. Evenly spread half of the pudding mixture over the graham crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers. Let set in the refrigerator for a few hours. (make spreading the frosting easier)
Spread the frosting over the top layer, covering completely. Cover, and chill at least 4 hours before serving. BEST when made the day before and left to sit overnight.
