Just in time for the Holiday Weekend, I've got a quick and easy Black Beans & Salsa recipe to share with you. Next week, JustRite is releasing a brand new stamp set called Preserves - this set works with the 2-3/8" Wooden Stamper (sold separately). This set is perfect for packaging up recipes using your fresh garden fruits and vegetables!
For my project, I used the Salsa image from the new JustRite Preserves set, and the Times Roman Font Size 25pt. I used two sets of the Times Roman Font, to have enough letters for the spelling in my border.The 2-3/8" Wooden Stamper has a double channel that's great for using the fonts to create your own sentiments around the borders.
I stamped my image in Black Archival on Watercolor Paper and colored using the Marker Watercoloring Technique from a past issue of the TJNL. Once the image was dry, I used my Big Shot and Circle Nestabilities to cut the images from the Watercolor Paper. I placed the border onto a Yellow Circle, then placed a the Salsa image on a Red circle and placed that onto the Yellow/Border Circles. I wrapped a piece of Twill around the canning jar (note this is an older type of canning jar, it's one I had gotten from my grandmother), and adhered my tag.
Here's the recipe:
Black Bean Salsa
2 Cans Black Beans, rinsed and drained
4 Plum Tomatoes, chopped
1/2 Red Onion, chopped
1 bunch Cilantro, chopped
Juice of 1 Lime
1/4 C of Olive Oil
1 tsp. Pepper
1 tsp. Cayenne Pepper
1 tsp. Cumin
1 tsp. Chili Powder
Salt
2 Cloves Garlic, minced
2 TBSP Red Wine Vinegar
In a large bowl combine tomatoes with salt and set aside for 10 minutes to bring out the juices. Add beans, onions mix well. Add cilantro, lime juice oil and vinegar. Stir to coat. Add spices to taste. Serve immediately, or set in refrigerator for 30 minutes prior to serving for flavors to intensity. If you want to spice it up a bit, add chopped jalapenos - but be sure to wear gloves when chopping!
